With its white colour, its greenish streaks and its unmistakable flavour, Gorgonzola is the "green" table cheese known all over the world.
Born around year 1000 in the city of Gorgonzola, in Milan province, from which this cheese inherited the name, gorgonzola is still produced with pasteurized milk from a single milking with the addition of enzymes and selected molds for marbling and it is aged for about 60 days at 4-6° C.
