Cotechino and Zampone are large sausages, a bit different in shape, but both made with lean and fat pork meat and rind, salt and different spices like pepper, nutmeg and cloves.
Cotechino (or Zampone) with lentils is an ancient Italian recipe. It is traditionally eaten on New year's Eve as a symbol of sharing, happiness, health and also...wealth! According to the tradition, infact, eating lentils at the start of the new year will bring luck and prosperity, because of the coinlike shape of these pulses!
Our cotechino and zampone are already pre-cooked, so they just need to be boiled for around 20-30 minutes (see products details for more information).
