Gnocchi alla Sorrentina is one of our favourite comfort food. A typical recipe from Sorrento, a beautiful coastal town near the Amalfi coast and Naples, now widely appreciated worldwide.
For this recipe, you can make your own home made potato gnocchi or alternatively you can use our ready-to-use gnocchi which are a great alternative, extremely convenient and with the authentic taste of freshly made gnocchi. You can find our range of gnocchi at the bottom of the recipe.
To make gnocchi alla Sorrentina you need just a few ingredients, but for best results make sure to choose only top quality products!
Ingredients (2 serves):
500g potato gnocchi
700g circa chopped tomatoes or tomato passata
300g circa cow mozzarella
100g grated Parmigiano Reggiano
2 cloves of garlic
5 – 6 basil leaves
50 ml extra virgin olive oil
Method:
Start preparing the tomato sauce. Place a large frying pan on the hob, add a little bit of olive and the garlic. When the garlic starts to sizzle, add the tomatoes and a large pinch of salt. Simmer for 10-15 minutes at medium heat and stir gently. When ready turn the heat off and add the basil leaves.
Meanwhile, bring a large sauce pan to a boil and add a handful of coarse sea salt. Pour the gnocchi and cook them for a few minutes as indicated on the pack. They are ready once they come to the surface. Drain the gnocchi and add them to the tomato sauce and toss.
In an oven-proof tray, pour a first thin layer of tomato sauce. Place half of the gnocchi in the tray and top with half of the mozzarella cut in small cubes and half of the grated Parmigiano Reggiano. Pour the last quantity of gnocchi left and top with the diced mozzarella and Parmigiano Reggiano left.
Place the gnocchi in the oven and grill for 5 minutes at 250C degrees.
