Trofie Speck & Provolone Main Course Recipe

Ingredients500 gr Fresh Trofie San Marco
200 gr Smoked provolone Auricchio
200 gr Guastalla Speck sliced
50 gr Peeled walnuts
50 gr Parmesan
5 gr Oil evo
Cut the Speck and Provolone in small stripes.
In a hot sauce pan pour the Extra virgin Olive oil and pan fry the Speck for few minutes (you’ll notice the Speck is Ready when it becomes translucent).
In the meantime, in a pot with salted boiling water add the Trofie, they should be ready in 5/6 minutes.
Lower the heat on the pan, add a small ladle of pasta water and the smoked provolone, stir until all the cheese is melted.
Drain the pasta and toss it with the sauce in the pan for 1 minute.
Serve it on the plates, finish it with Grated Parmesan and Walnuts, enjoy it while hot.
