Bresaola is air-dried, salted beef that has been aged two to three months until it becomes hard and turns a dark red, almost purple color. It is lean and tender, with a sweet, musty smell. Bresaola is a specialty from the central Alps region and specifically a valley named Valtellina.
The traditional way of serving it is with Parmigiano Shavings, Rocket Salad, Extra Virgin Olive Oil and Lemon.
