Squeezed between the Apuan Alps and the Tuscan-Emilian Apennines, Garfagnana is a territory that has remained intact over the years, where ancient mountain traditions are still alive.
The Pecorino Metello after a first and short maturation in the Dairy is transferred to Metello, the village of origin of our grandparents , a mountain village at 1,000 meters above sea level where our aging cellar is located, “Tuada” in the Garfagnino dialect.
After refining, in totally natural conditions , the pecorino is covered with chestnut peels , which in addition to characterizing the rind, strongly recall the aromas and flavors of the chestnut groves of our Tuscan-Emilian Apennines.
