Siberian caviar comes from the Siberian sturgeon.
This is moderately sized species and reaches a weight anywhere between 17 and 89 lbs.
(between 8 and 40 kg). Native to the fluvial basins of Siberia (from the Ob river to the Kolyma river) and in the Baikal.
