Black pepper, Chilli Pepper, Extra Virgin Olive Oil
Quickly fry the chopped onion, celery and carrot in a couple of spoons of Extra Virgin Olive Oil. Add the chilli pepper, the black pepper and the sausages, cut into pieces and let them "seal" at high stirring occasionally. Add the tomatoes after passing them in the blender. Cook covered for 1 hour.

Tip: you can serve with rice or polenta as alternative to Cous Cous
