Focaccia, Caprino Cheese & Olives Main Course Recipe
Focaccia is a traditional Italian flat oven-baked products, very similar in texture to pizza dough. It can be used as an antipasto, bread, snack or sandwich.
There are lot of different recipes with different ingredients. We suggest to try this one, very tasty and easy to prepare. Most the ingredients are available on our shop (scroll down)!
Ingredients for 4 servings:
For the dough
500g 00 flour
8g dry yeast
250g of water
10g sugar or honey
20g extra virgin olive oil
10g fine salt
For the garnish
50g extra virgin olive oil
100g pitted olives
10g coarse salt
300g Maurino cheese
Preparation:
For first thing prepare the dough: Put the flour into a bowl and make a well in the center (this practise is called “corona” “crown”).
A part in a glass, melt the yeast in the water (you can use lukewarm water to facilize the melting).
Add it into the mixture and add honey (or sugar) and gradually incorporate them to the flour. Add the oil and salt and knead the dough until it is smooth and soft. Cover with oiled clean film and let rise at room temperature (preferably warm) for 30 minutes.
Transfer the dough on a baking sheet and stretch it with your hands to form a thin circle. Grease the dough with extra virgin olive oil and let it rise again for at least 50 minutes until it has doubled up the volume.
Place the pitted olives and the coarse salt on the surface of the dough and cook it for 30 minutes at 200°C in a preheated oven.
The focaccia is cooked when the surface is golden brown. Turn off and let cool in the oven. The perfect consistency is soft inside and crunchy on the surface. Add Maurino cheese cut in small pieces. At the end drizzle with extra virgin olive oil and cut the focaccia in individual rectangles.
